Red Sauce Rebellion will move into Victor’s on Water space this December

Twin Cities food fans, rejoice. A new restaurant concept named Red Sauce Rebellion is coming to Excelsior this December, aiming to fill the void of approachable yet modernized Italian. Co-owners Eli Wollenzien and Deacon Eells of Coalition are behind the effort, which is set to open in December for lunch and dinner in the former Victor’s on Water space at 205 Water Street in the heart of Excelsior.

“Red Sauce Rebellion is all about bringing back the simplicity and deliciousness of red and white sauce, just like you’d have in the good old days, but with an unexpected spin,” said Eli Wollenzien, chef and co-owner. “We are going to have a fun, energetic vibe that is welcoming for families, date nights, boaters – and basically anyone who wants to leave the cooking to us.”

The Red Sauce Rebellion menu won’t feature any tongue twisters, but it does plan to shake up the norms of stereotypical Italian food with dashes of creativity. Think charred oysters, a goat cheese tart, fritto misto and meatballs for appetizers; pappardelle, baked ziti, and seafood linguini for pastas, a range of cast iron pizzas, and a selection of entrees including short rib, chicken parmesan and lasagna.

In addition to a new name and menu, Red Sauce Rebellion is significantly updating the interior space, adding colors, textures and seating in the dining room and bar area that adds to the casually sophisticated, energetic atmosphere diners will experience.

“We are very proud to be a part of the Excelsior community,” said Deacon Eells, co-owner. “The town and people have been so welcoming since we first opened our doors at Coalition, and we’re excited to create another space for both locals and people looking to experience Excelsior to gather.”

    I thought Mark, who used to own Biella, also owned Coalition?
